Makes enough for 10 guests

For the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Cocktail (makes 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Directions

Making the Syrup: Place all the items into a saucepan, heat until it reaches a simmer, stirring so the sugar melts. Then, remove from the stove and leave to reach room temperature fully. Decant to a sealable bottle, seal and store in the fridge, it will last for up to one month.

For the Premix: Mix every liquid ingredients into one sizeable container, leave to sit for 60 minutes, then pass it through best through cheesecloth, making it completely strained.

For serving: Add 85ml of your batch mix into your cocktail shaker filled with ice, and stir lightly for a minute until cold. Filter into a chilled martini glass or equivalent, decorate with some cranberries adding the final touch by giving it a quick spritz of the essential oil over the drink.
